Vietnamese Lemongrass Chicken

Ingredients

  • 1 lb (500 g) chicken thigh, sliced
  • 2 stalks lemongrass, minced (tender part)
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) fish sauce
  • 1 tbsp (15 ml) soy sauce
  • 2 tsp (10 ml) sugar
  • 1 tbsp (15 ml) oil
  • Scallions, lime

Steps

  1. Marinate chicken with lemongrass, garlic, fish sauce, soy, and sugar (20–30 minutes).
  2. Stir-fry in hot oil until caramelized and cooked through.
  3. Top with scallions; serve with lime over rice.

  • Wine: Riesling (off-dry) – acidity balances lemongrass; Grüner Veltliner – peppery freshness
  • Beer: Pilsner – crisp; Saison – herbal, dry
