Saag Paneer

Ingredients

  • 14 oz (400 g) paneer, cubed
  • 2 tbsp (30 ml) oil or ghee
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) grated ginger
  • 1 green chili, chopped
  • 1 lb (500 g) spinach (fresh or frozen)
  • 1 tsp (5 ml) garam masala
  • 1/2 tsp (2.5 ml) cumin
  • 2/3 cup (150 ml) cream or yogurt
  • Salt

Steps

  1. Brown paneer in 1 tbsp (15 ml) oil; set aside.
  2. Sauté onion, garlic, ginger, and chili; add spinach and spices; cook until wilted.
  3. Blend partly if desired; stir in cream and paneer; simmer 5 minutes. Season.

  • Wine: Gewürztraminer – aromatic; Riesling – off-dry
  • Beer: Pale Ale – bitterness cuts cream; Hefeweizen – fruity
