Mexican Crema (overnight)

Ingredients

  • 1 cup (240 ml) cream
  • 2 tbsp (30 ml) buttermilk
  • 1/8 tsp (0.5 ml) salt
  • 2 tsp (10 ml) lime juice

Steps

  1. Stir cream and buttermilk. Store at room temp for 12 hours.
  2. Mix in salt and lime juice (can be stored for up to 2 months).

Pairings

  • Wine: Sauvignon Blanc – citrusy; Albariño – saline & fresh
  • Beer: Mexican Lager – crisp; Pale Ale – hoppy balance
