Spicy Thai Ground Pork with Basil

Ingredients

  • 1 lb (500 g) ground pork
  • 4 cloves garlic, minced
  • 2–3 red Thai chilies, sliced
  • 1 tbsp (15 ml) vegetable oil
  • 1 tbsp (15 ml) soy sauce
  • 1 tbsp (15 ml) fish sauce
  • 2 tsp (10 ml) sugar
  • 1 tbsp (15 ml) oyster sauce
  • 1 bunch Thai basil leaves
  • (Optional) 2 fried eggs, steamed rice

Steps

  1. Heat oil; sauté garlic and chilies until fragrant.
  2. Add pork; cook until browned and crumbly.
  3. Stir in soy, fish sauce, sugar, and oyster sauce.
  4. Toss in basil until just wilted. Serve over rice; top with fried egg.

Pairings

  • Wine: Dry Riesling – acidity vs heat; Grüner Veltliner – peppery, herbal
  • Beer: Pilsner – crisp; IPA – hops cut spice
