Roasted Veggie Grain Bowls with Tahini Dressing

Ingredients

Components

  • 2 cups cooked grains (quinoa, farro, or rice)
  • Assorted vegetables (sweet potato, broccoli, chickpeas)
  • 2 tbsp (30 ml) olive oil
  • Salt and pepper

Tahini Dressing

  • 3 tbsp (45 ml) tahini
  • 1 tbsp (15 ml) lemon juice
  • 1 tsp (5 ml) maple syrup
  • Water to loosen
  • Salt

Steps

  1. Roast veg at 425°F (220°C) tossed with oil, salt, and pepper until browned.
  2. Whisk dressing ingredients smooth.
  3. Serve bowls with grains, roasted veg, and drizzle of tahini dressing.
