Roasted Veggie Grain Bowls with Tahini Dressing
Ingredients

- 2 tbsp (30 ml) olive oil
- Salt and pepper
Tahini Dressing
- 3 tbsp (45 ml) tahini
- 1 tbsp (15 ml) lemon juice
- 1 tsp (5 ml) maple syrup
- Water to loosen
- Salt
Steps
- Roast veg at 425°F (220°C) tossed with oil, salt, and pepper until browned.
- Whisk dressing ingredients smooth.
- Serve bowls with grains, roasted veg, and drizzle of tahini dressing.
