Lamb Kofta with Yogurt Sauce

Ingredients

Kofta

  • 1 1/2 lb (700 g) ground lamb
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1 tsp (5 ml) ground cumin
  • 1 tsp (5 ml) ground coriander
  • 1/2 tsp (2.5 ml) cinnamon
  • Salt and pepper

Yogurt Sauce

  • 3/4 cup (200 g) Greek yogurt
  • 1 tbsp (15 ml) lemon juice
  • 1 tbsp (15 ml) mint, chopped

Steps

  1. Mix lamb with onion, garlic, spices, salt, and pepper; form logs or patties.
  2. Grill or pan-sear 3–4 minutes per side until 160°F (71°C).
  3. Combine yogurt, lemon, and mint; serve alongside.

Pairings

  • Wine: Syrah – smoky, savory; Grenache – fruity, spicy red
  • Beer: Brown Ale – nutty; Belgian Dubbel – dried fruit complexity
