Classic Beef Chili

Ingredients

  • 1 tbsp (15 ml) oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 lb (700 g) ground beef
  • 2 tbsp (30 ml) chili powder
  • 1 tsp (5 ml) cumin
  • 1 tsp (5 ml) smoked paprika
  • 14 oz (400 g) tomatoes
  • 14 oz (400 g) kidney beans, drained
  • 1 cup (250 ml) beef stock
  • Salt, sugar to balance, lime

Steps

  1. Sauté onion and garlic; add beef and brown.
  2. Stir in spices; cook 1 minute. Add tomatoes, beans, and stock; simmer 30–40 minutes.
  3. Season to taste; finish with a squeeze of lime.

Pairings

  • Wine: Zinfandel – ripe fruit & spice; Syrah – smoky, peppery
  • Beer: American Stout – roasted notes; IPA – bitterness balances spice
